I'd like to be able to set up a template and never have to touch it again, and just fill in product details on the Shopify end.
Certain stuff from the product area I'd like to be able to put in fields further down the page.

You might able to do this with the new Custom Metafields in Shopify. For example, pull info from this Custom Metafield into this part of the Product Page.

This pretty much covers what I was going to suggest: In GemPages builder - in each 'section' (i.e. Products) have a Drag and Drop for "MetaField" which when dropped onto a Product page would provide a Dropdown menu with available (user created) Metafields. Just a bit easier than adding Liquid. :-)
